Yesterday was Vegetable Day
Many of you know that Steve and I have been on a Ketogenic diet for about 3 months now, which means that we are now very good at eating our vegetables! I have to say that I don’t know if I will go back to filling my plate with carbs after this last round with our diet. Including so many vegetables into our regular routine has been wonderful, not just for weight loss (which typically isn’t my goal) but also for my energy level! I never feel so full that I can’t move any more which is amazing, I eat more often and more volume of food while simultaneously consuming fewer calories which is wonderful and all the while I am still riding my bike as much as I want without fatigue!
Now I don’t think that I would recommend a ketogenic diet, it is very far at the extreme end of the spectrum when it comes to diets that are out there, however; I do highly recommend including more vegetables into your diet and finding ways to cook them that you actually enjoy. In my case, Steve and I LOVE broccoli and brussels sprouts and probably eat each of them about twice per week.
Our favorite way to prepare both is simply to lightly coat them with olive oil, salt and pepper (and maybe garlic if we’re feeling it) and roast them at 400 degrees for about 20 minutes or until they are crispy. But we also steam our broccoli sometimes with cheese or put broccoli into a stir fry. Just last night we made a stir fry with leftover pork chops, broccoli, onions and bamboo chutes with no rice of course because we’re on keto, but you could easily add rice if you want.
Moral of the story, eat your vegetables and you’ll be happy and healthy!
